    In a small pot , combine white rice, 1¼%cup water, and a pinch of salt. Bring to a boil; cover and reduce to a low simmer. Cook until rice is tender ⏱️ 15 minutes .

    Halve blood orange; squeeze juice from one half into a small bowl . Peel remaining orange half; cut into ½-inch pieces.

    To bowl with orange juice, stir in sweet soy glaze, sweet thai chili sauce, ponzu sauce, and rice wine vinegar. If you like a sweeter sauce, stir in a pinch of sugar.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add green bell pepper, salt, and black pepper; cook, stirring occasionally, until slightly tender ⏱️ 2 minutes .
